History and character
The restaurant opened in the Eighties next to the cellar, and it grew up alongside Elvira — a force of nature, and a point of reference for anyone who comes through this door. The people at the stove today are the ones she handed over to, but Elvira still comes by every day: she watches, tastes and says what she thinks, because silence is not her way.
Her influence goes well beyond what ends up on the plate. Hers is a restless mind, always after something new, working on instinct rather than recipe books. That is often how the themed evenings begin: an idea that turned up on a Tuesday. What she set in place is a living Ligurian kitchen, faithful to tradition but tired of turning out the same dish the same way forever.
From the table to the tasting room of the cellar, our identity mirrors her character: straightforwardness, openness and a visceral passion for real hospitality.
The sea seven kilometres away, the valley behind us
Sarola sits in between: seven kilometres above the port of Oneglia, with the Valle Impero all around.
The fish comes up from the port — whatever there is that day. Vegetables, pulses and herbs come from the valleys, from growers who harvest little and harvest it well. The oil and the wine we make ourselves, a few steps from the dining room.
That is why the menu moves with the seasons. We do not decide in advance what to cook: what we find decides.
